Ginger-Bacon Cookies


Prep Time: 1 - 2 hours
Cook Time: 30 minutes or less
Serves: 12Dessert
Ingredients:
Ginger-Bacon Cookies3/4 cup bacon fat, cooled (from 1 1/2 pounds of cheap bacon)
1 cup sugar
4 Tablespoons molasses
1 large egg
2 cups all-purpose flour
1 1/2 teaspoons salt
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon ground cinnamon
Note: it's best to prep this dough earlier so it can chill in the fridge for at least an hour.
Preheat oven to 350 degrees. Or, if you're following my strange chronology, you turn it down from the broiler setting and let it cool for a little bit before cookieing it up.
Mix the wet ingredients in a bowl.
Now is when you can appreciate the aroma of bacon fat with delicious spices like ginger, cinnamon and cloves...it's really rather pleasant!

Step 1:
Add your dry ingredients and mix until combined.

Step 2:
At this point, I put my dough in the fridge to chill. So fast forward an hour or more, and get ready to roll your cookies into tablespoon-sized balls. Coat each one in sugar and arrange on the cookie sheet.Give these puppies some room to grow - they're going to spread!
